Harden your butter
Let’s get one thing clear about butter. It’s absolutely amazing! Whether it’s rock-solid or runny, it’ll taste good on virtually anything. That said, overly softened butter can be difficult to work with, and some recipes require chilling your butter to a hard consistency.

If you need to solidify softened butter, don’t just pop it in the fridge as this can lead to curdling. Instead, create an ice bath with water and ice (obviously) and let the softened butter soak. As the butter chills, it’ll gradually return to its solid state. However, if you use salted butter, it will lose some of its saltiness.
