#38: You Don’t Have to Let Your Herbs Die
Herbs and greens like kale work in much the same way when it comes to them starting to wilt and go bad. They start off by going wilty and kind of slimy. And honestly, it doesn’t take long to be in your fridge before these start changing. I’ve had as little as a day sometimes to use all of my herbs or compost them.
Since I’ve learned to revive them, though, I have had less waste, even in the compost. All you have to do is stick the herbs in an ice bath for about 30 minutes and then drain. I also try to wrap them in a damp tea towel, just like I do with greens, and that seems to help.
