Eating sushi is a serious business. Of course, there are barbarians like me who will get it at the grocery store (and usually immediately regret that choice), but for the serious sushi connoisseur, it is a big deal, with people studying for years to become sushi chefs and with the best restaurants costing a truckload of money.
So if you are going to play a lot of money for your meal, and then eat it with your hands as is often done, you would be pretty unhappy if the experience was ruined by smelling the soap you just used as you brought the sushi to your mouth. This restaurant has really thought of everything and went the extra mile to make their customers happy.
